Ibuki have 2 main bladesmiths making carbon steel knives in differing styles, steels and finishes.
These knives made in the San Mai tradition incorporating blue steel No 2, which comes from a family of well respected high carbon steels made by Hitachi (see info).

Japanese and Western knife culture has cross pollinated vigorously over the years producing some lovely hybrids such as these multi purpose knife styles called Gyuto and Petty.
Made with AUS 8 stainless steel, a widely used and respected steel of excellent qualities (see info).
