Gyuto Chef's Knife 210mm
This handmade Japanese Gyuto is a Japanese version of a Western all purpose Chef’s knife.
It is a traditional ‘Hidden Tang’ style of knife, where the steel part of the knife that forms the handle is a long tapered shape that gets buried in the handle
As knife culture evolves the West has taken and adapted ideas from Japanese knifemakers resulting in the introduction of a number of shapes into the western knifemakers vernacular, for example the ‘Santoku’ is now a regular shape made by western knifemakers.

San Mai layered forging where the central core, which is in this case Blue Steel #2, is forge welded with softer tougher iron to protect and strengthen it.
