The Petty knife is a little sister to the Gyuto Chef’s knife.
It is an all purpose knife for all those jobs when you don’t need a large knife.
Mid sized knives are a joy use, they are easier on the arm and hand due to less leverage being exerted on the joints which a long blade automatically embodies.
It is slightly easier to be accurate using a smaller knife than a large blade.
Make no mistake when you need a large knife there is no substitute but for most kitchen work, a mid sized knife is excellent.
